Pumpkin, Zucchini Waffles
These pumpkin, zucchini waffles are a perfect healthy breakfast.
The best part is that you can’t even tell there is zucchini in it except for the little spots of green.
Its perfect for giving your children some healthy greens without them even knowing.
As we all know, pumpkin is associated with fall but I personally feel that you can enjoy pumpkin whenever the craving hits you.
How these came about
Not only can you make these whenever the craving hits you, but you can also make these when you need to cook ingredients before it goes bad.
That’s how this recipe came about.
I was looking for a recipe to follow that used pumpkin and zucchini but wasn’t finding much so I decided to try whipping
some waffles up myself.
I might perfect these eventually but I quite enjoyed how these turned out and decided I couldn’t pass up the opportunity to share.
So without further ado, here is the recipe for pumpkin zucchini waffles.
Pumpkin Zucchini Waffles
Equipment
- 2 bowls
- 1 hand mixer or kitchen aid
- 1 measuring cup
- 1 dry measuring cup
- 1 tsp
Ingredients
- 2 cups flour
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ cup sugar
- 3 eggs
- 1 tsp vanilla
- 1 ½ cups almond milk
- ¾ cup pumpkin puree
- 1 small zucchini
Pumpkin Zucchini Waffle Instructions
Start by mixing the flour, baking powder, salt, cinnamon and nutmeg in a small bowl; set this aside.
In a large mixing bowl like a kitchen aid mixing bowl, mix the eggs and sugar.
Once blended, add the vanilla, milk and pumpkin puree and blend it all together.
While blending the mixture, use a cheese grater to grate one zucchini to small bits.
Pour the zucchini into the mixture and fold it in with a spoon so as too not over mix it.
It should look similar to this picture.
Now all that is left to do is cook it in a waffle maker.
I used my tiny individual waffle maker so I was able to make a bunch of small ones but you can easily use this recipe with a large waffle maker.
I bet these would make some good pancakes as well, although I have not tried that as of yet.
Anyways, just follow the usual instructions on your waffle maker and you will have some yummy waffles for breakfast or even a healthy snack.
