Strawberry, Kiwi, Banana Bread
How this Bread came about
This banana bread recipe had been one that my mom taught me when I first started baking and overtime I tweaked it a little.
At some point, my mom heard of the option to add strawberries and kiwis and we decided to try it and add it to our own recipe.
It was an instant hit in the family.

Strawberry, Kiwi, Banana Bread
Equipment
- kitchen aid or hand mixer
- 2 bowls
- measuring cups
- bread pans
- oven
Ingredients
- ¼ cup + 2 tbsp olive oil
- 1 cup sugar
- 2 eggs
- 4 bananas
- 2 cups flour
- 1 tsp baking soda
- ½ cup strawberries chopped
- ½ cup kiwi's chopped and pealed

Strawberry, Kiwi, Banana Bread instructions
Begin by preheating the oven to 350 and oiling two bread pans or one larger pan.
Blend the oil and sugar together in a large mixing bowl with a hand mixer or a kitchen aid.
Add the eggs and banana and blend again.
I like to add the eggs and blend and then add the bananas and blend again so as to not completely blend the bananas.
Once blended, set aside and in a small bowl mix the flour, salt and baking soda.
Pour the dry ingredients into the banana mixture and blend until combined.
I would either pour it in as the mixer is going or pour in a little at a time so as to completely blend everything.
Put the mixture aside and cut up the strawberries and kiwis .
Add the fruit to the batter and stir with a spoon.
Do not use the mixer as you want the fruit to stay in chunks.
Once everything is mixed together, pour the batter into the prepared pans and smooth the surface.
As a side note, its perfectly fine to add the fruit after you have put it into the pan as you will notice from my picture.
I was doing several types of bread at once and it was easier to add the fruit this way.
Bake in the oven at 350 for 40 minutes or until a toothpick or fork comes out almost clean.
Let the bread cool for a few minutes and then cut and enjoy.
