Blackberry Banana Bread
As I was planning on making a large batch of banana bread the other day, I thought about what I could do to switch things up a bit.
I decided I was going to try out blueberries but when I was at the store they just so happened to be completely out.
So I decided at the last minute to try blackberries instead and lo and behold, it might be my favorite combination.
Although, I might be a bit biased as blackberries are one of my favorites.

Blackberry Banana Bread
Equipment
- 1 kitchen aid or hand mixer
- 2 bowls
- measuring cups
- 1 or 2 bread pans
- oven
Ingredients
- ¼ cup + 2 tbsp olive oil
- 1 cup sugar
- 2 eggs
- 4 bananas
- 2 cups flour
- 1 tsp baking soda
- ½ to 1 cup blackberries
Blackberry Banana Bread Instructions
Begin by preheating the oven to 350 and oiling the bread pan(s).
In a mixing bowl or kitchen aid bowl, mix the oil and sugar.
Add the eggs and mix and then add the bananas.
You can mix the eggs and banana at the same time if you would like but I personally prefer to do it separately.
In a separate bowl, mix the flour, salt, and baking soda together and then pour it into the banana mixture.
Either pour it in while the mixer is on or pour a little at a time and mix in-between pours so that everything comes together well.
Set the mixture aside and measure out the blackberries.
Pour the blackberries into the mixture and stir them in just so.
Pour the mixture into the prepared pans and bake in the oven at 350 for 40 minutes or until a toothpick or fork comes out almost clean.
Let the bread cool for a few minutes and then cut, serve and enjoy!
