Avocado Hole in the Middle
The avocado hole in the middle is basically a hole in the middle without the bread.
I grew up calling an egg cooked in the middle of a piece of bread a hole in the middle but I think there is technically another name for it.
The name “Avocado Hole in the Middle” sounded fancy to me so I decided to stick with it rather then look for a more “correct” name.
That being said, since the avocado is replacing the bread, you could state that this is a healthier option out of the two.
I saw a recipe for this years ago and decided I definitely needed to try it for myself.
I have played around with different toppings and parings over the years so I wouldn’t say I have a set way to make it.
But this is the way I have enjoyed it the most, so I thought I would share.
Avocado Hole in the Middle
Equipment
- 1 Iron skillet or a pan that can go in the oven.
- Spatula
- cutting board
- knife
Ingredients
- 1 large avocado
- 2 eggs
- ¼ to ½ bell pepper
- cheese
- salt
- pepper
- 2 to 4 slices of ham or some form of meat.
- green onions
Instructions
- preheat the oven to 350
- prepare a pan that can go on the stove and in the oven or two different pans to transfer when the time comes.
- cut the avocado in half and remove the sides to form a hole in each side
- cut the toppings and shred the cheese
Avocado Hole in the Middle Instructions
Cutting and prepping
Preheat the oven to 350.
Prepare a pan that can go on the stove top and in the oven like a skillet or set out another pan to transfer the eggs when ready.
Begin by cutting the avocado in half and cutting off the ends of each half so that there are two thick slices of avocado but with a hole.
I unfortunately did not have large avocados at the time so mine look a lot smaller then what it should be.
Cut the ham, green onions, bell peppers and any other topping you would like to add and set aside.
Shred the cheese and set aside.
Cooking on the stove
Oil the pan and turn the heat on to medium heat.
Place the avocados in a pan or skillet with the smaller side of the hole on the bottom and crack an egg into each avocado.
Because my avocados were smaller, the egg cooked around the avocado as well which was actually just as delicious so you could always cook it like this if you want to.
Sprinkle the salt and pepper on the eggs.
The amount is up to you really.
Place the toppings on the eggs and cover with the shredded cheese and green onions last.
Cook for two to four minutes to give the bottom of the egg a bit of a crust like feeling on the bottom.
Baking in the oven
Turn the stove top off and place the pan into the oven or transfer the eggs carefully into an oven proof pan.
Bake for six to eight minutes or until the egg whites look cooked just enough.
If you want more runny yoke, I would lessen the time on the stove top or remove that step all together.
Remove the pan from the oven, let it cool and serve.

* Use the rest of the avocado by crushing it up and adding it as a spread on the egg or some toast.
You can even mix it with hot sauce like I did in the above picture.
