Banana bread

This is a quick and simple banana bread recipe.

It’s perfect if you feel like making a bread but don’t want to spend a long time in the kitchen.

Plus, it’s perfect to pair with a cup of coffee or hot tea in the morning or have it as a mid day snack.

When I first thought about starting a blog, the first recipe I thought to add was this banana bread recipe which my mom taught me from an old cookbook she had.

This recipe was one of the first things I leaned to bake when I was a kid and overtime I learned to tweak it a bit to make it what it is today.

Now, I like to make the plan banana bread when I want something simple or I’ll switch it up and add other fruit.

Equipment

  • 1 kitchen aid or hand mixer
  • 2 bowls
  • measuring cups
  • 1 or 2 bread pans
  • 1 oven

Ingredients

  • ¼ cup + 2 tbsp olive oil
  • 1 cup sugar
  • 2 eggs
  • 4 bananas
  • 2 cups flour
  • 1 tsp baking soda

Instructions

  • Preheat the oven to 350 and oil the pan. Set aside.
  • Mix the oil and sugar in a mixing bowl.
  • Add the bananas and eggs and mix again.
  • add the flour and baking soda and mix.
  • pour the batter into the prepared pan and place in the oven for 40 minutes or until a toothpick comes out clean.
  • Remove from the oven and let it sit for a few minutes.
  • Cut into slices and enjoy!

 

Banana Bread Instructions

 

begin by preheating the oven to 350 degrees and oiling the bottom and sides of two small loaf pans or one large baking pan.

You can also use a casserole pan if you would like for a thinner bread.

 

Wet ingredients

Mix the oil and sugar in a mixing bowl with a hand mixer, or you can use a kitchen aid if you would like.

add the eggs and banana and blend together.

I personally like to add the eggs and blend it and then add the bananas and blend again.

That way the bananas are not as blended.

You certainly do not have to do that but I’ve always preferred to do it that way.

once it’s all blended together set aside.

 

Dry ingredients

In a separate bowl combine the flour and baking soda.

 

Pour the dry ingredients into the bowl with the liquids.

Either pour it in as the mixer is on or pour in the dry ingredients a little at a time.

That way it will mix well together.

Baking

Once it has been blended together, pour the mixture into the prepared pans and spread it out evenly.

Place in the over for 40 minutes or until a toothpick or fork comes out mostly clean.

Banana Bread

Let the bread cool for a few minutes and then cut into slices and enjoy.
