Cucumber Bread
This delicious cucumber bread is an excellent recipe to use your extra cucumbers.
If you had asked me a few months ago about cucumber bread, I would have had no idea that was a thing.
My sister started a garden this past year and suddenly had an abundance of cucumbers.
So she asked me to see if I could come up with something that didn’t involve a salad.
Upon researching I found that cucumber bread is in fact a thing.
I decided I was going to try making my own recipe and after several tries this was the result.
I am quite happy with it as it reminds me of banana bread but it’s different.
So If I want to switch things up and not have banana bread for third time in one month, cucumber bread is the way to go.

This recipe is perfect for adding different options just like my banana bread recipes.
Feel free to add any kind of nut or fruit that would like to try.
I have not tried every nut or fruit out there but I have tried a few and they have all worked for me.
Personally I really enjoyed adding pecans, strawberries and blueberries and out of these options, I preferred putting the pecans and strawberries together and the blueberries as a separate pan.
Those are Definity not the only combos you can do though.
Side note
As a side note, You might notice that the pictures have different fruit in the bread throughout the recipe.
I had to use pictures from three different times I made this bread because I either forgot to take step by step photos or the lighting was so bad.
Please forgive the inconstancy in the photos and when I get around to making more cucumber bread I will hopefully have the correct lighting and remember to take those few extra photos.

Cucumber Bread
Equipment
- 1 bread pan or casserole pan
- 2 mixing bowls
- 1 mixing spoon or kitchen aid
- 1 cheese grater
Ingredients
- 2 cups flour
- ½ tsp baking soda
- ¼ tsp baking powder
- 1 tsp salt
- ¼ tsp cinnamon
- ¼ tsp ground cloves
- ¾ cup sugar
- ½ cup olive oil
- 2 eggs
- 1 tsp vanilla
- 2 tsp lemon
- 1 cup cucumber grated
- brown sugar
Instructions
- Begin by preheating the oven to 350
- using a cheese grater, grate the cucumber until you have 1 cup. If you would like, you can peel the cucumber but I preferred to keep the peel on as it saves time and did not seem to change the recipe at all.
- Add the flour, baking soda, baking powder, salt, cinnamon, and ground cloves in one of the mixing bowls and mix together.
- In the other mixing bowl or kitchen aid, mix the sugar and olive oil.
- Once it is blended together, add the eggs, vanilla, lemon, and cucumber.
- Pour the dry ingredients into the wet ingredients a little at a time so that it blends together well.
- Now you can add any of the add-ins you would like. Make sure to cut them into bite-size pieces if necessary.
- Pour the batter into the prepared pan and sprinkle as much brown sugar as you would like over the top.
- Place the pan into the oven and bake for 40 minutes or until a toothpick or fork comes out clean.
- Remove the pan from the oven and let cool for a few minutes before cutting and serving.
- Enjoy!
Cucumber bread Instructions
Preparing
Begin by preheating the oven to 350.
Lightly oil your pan and set aside.
Using a cheese grater, grate the cucumber until you have one cup.
If you would like to, you can peel the cucumber first but you certainly do not have to.
I actually enjoyed the bread more when I left the peel on but that could be because it didn’t take me as long.
I don’t think I could tell a difference in the taste or texture.
Adding the dry ingredients
In the smaller mixing bowl, add the flour, baking soda, baking powder, salt, and ground cloves and mix it all together.
Adding the wet ingredients
In the larger mixing bowl, and the sugar and olive oil and blend together.
Once its blended together, add the eggs, vanilla, lemon, and grated cucumber.
Blend again until everything is combined.
Its okay if there are some chunks of cucumber.
It really depends on how small you grated the cucumber and how big or small you want them to be.
I have tried both ways and in my opinion both taste good.
If you would like the cucumber to be more in chunks then I would recommend blending all the ingredients first and then adding the cucumber in last and mixing with a spoon instead of the blender.
Combining
Pour the dry ingredients into the wet ingredients slowly.
If you are mixing by hand, pour in the dry ingredients a little at a time and mix after every pour.
If you are using a kitchen aid then you can just turn it on and pour the dry ingredients in slowly.
Just make sure that everything is mixed together well.
Adding the fun ingredients
Now that the batter is finished, you can add any of the fun things you would like to.
I personally enjoyed pecans and strawberries or even better, blueberries.
Whatever you add, make sure they are cut into bite size pieces.
I would put about a cup of chopped nuts and or fruit.
If you want to add a little more or less that should work just make sure you don’t add too much otherwise the bread won’t turn out as nicely.
Finishing up
Pour the batter into the prepared pan and sprinkle the top with brown sugar.
Based on the picture above, I would put just a little bit more but not too much more.
You can put as much or as little as you would like.
Place the pan in the oven and bake at 350 for 40 minutes or until a toothpick or fork comes out clean.
Remove the pan from the oven and let it cool for a few minutes before cutting and serving.

Tips
- If the add ins are not spreading properly in the pan once you pour it out you can take your spoon or even a chopstick and swirl the batter around. Just make sure to do it before the brown sugar goes on top unless you want to swirl the brown sugar into the bread which is not a bad idea if you want a sweeter bread.
