Blueberry Waffles (Gluten-Free)

Equipment

  • 1 waffle maker
  • 3 mixing bowl (1 large, 1 medium, and 1 small)
  • 1 microwave safe bowl/cup or a small pan
  • dry measuring cups
  • liquid measuring cups
  • mixing spoon

Ingredients

  • 3 cups oats (blended)
  • 2 tsp baking powder
  • 1 tsp salt
  • ½ tsp cinnamon
  • ¼ cup butter
  • ¼ cup sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1 ½ cups milk
  • 1 ½ cups blueberries

Instructions

  • Begin by blending your oats in a food processor. Use the blend option, not the puree.
  • Pour the oats into a medium-sized mixing bowl and add the baking powder, salt, and cinnamon. Mix everything together.
  • Melt the butter in a microwave-safe bowl/cup or on the stovetop and pour it into a separate bowl. Make sure this is a larger bowl.
  • Add the sugar and vanilla to the bowl with butter in it and mix it together.
  • Add the milk to the liquid mixture and mix again.
  • In a small bowl, add the eggs and beat them until they come together and form bubbles all over the surface.
  • Pour the bowl with the dry ingredients into the bowl with the liquid and mix it all together.
  • Next, add the egg mixture to the bowl and stir in the eggs until it is just combined. Do not over-stir it.
  • Wash your blueberries and then pour them into the batter and combine.
  • Turn on the waffle maker and when it is hot enough, begin by spraying it with some cooking spray if needed and pouring a spoonful of batter onto the griddle. close the top and wait for it to cook.
  • Remove from the waffle maker and place on a plate to cool slightly.
  • Enjoy!
