Begin by preheating the oven to 350
using a cheese grater, grate the cucumber until you have 1 cup. If you would like, you can peel the cucumber but I preferred to keep the peel on as it saves time and did not seem to change the recipe at all.
Add the flour, baking soda, baking powder, salt, cinnamon, and ground cloves in one of the mixing bowls and mix together.
In the other mixing bowl or kitchen aid, mix the sugar and olive oil.
Once it is blended together, add the eggs, vanilla, lemon, and cucumber.
Pour the dry ingredients into the wet ingredients a little at a time so that it blends together well.
Now you can add any of the add-ins you would like. Make sure to cut them into bite-size pieces if necessary.
Pour the batter into the prepared pan and sprinkle as much brown sugar as you would like over the top.
Place the pan into the oven and bake for 40 minutes or until a toothpick or fork comes out clean.
Remove the pan from the oven and let cool for a few minutes before cutting and serving.
