Cucumber Bread

Equipment

  • 1 bread pan or casserole pan
  • 2 mixing bowls
  • 1 mixing spoon or kitchen aid
  • 1 cheese grater

Ingredients

  • 2 cups flour
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • 1 tsp salt
  • ¼ tsp cinnamon
  • ¼ tsp ground cloves
  • ¾ cup sugar
  • ½ cup olive oil
  • 2 eggs
  • 1 tsp vanilla
  • 2 tsp lemon
  • 1 cup cucumber grated
  • brown sugar

Instructions

  • Begin by preheating the oven to 350
  • using a cheese grater, grate the cucumber until you have 1 cup. If you would like, you can peel the cucumber but I preferred to keep the peel on as it saves time and did not seem to change the recipe at all.
  • Add the flour, baking soda, baking powder, salt, cinnamon, and ground cloves in one of the mixing bowls and mix together.
  • In the other mixing bowl or kitchen aid, mix the sugar and olive oil.
  • Once it is blended together, add the eggs, vanilla, lemon, and cucumber.
  • Pour the dry ingredients into the wet ingredients a little at a time so that it blends together well.
  • Now you can add any of the add-ins you would like. Make sure to cut them into bite-size pieces if necessary.
  • Pour the batter into the prepared pan and sprinkle as much brown sugar as you would like over the top.
  • Place the pan into the oven and bake for 40 minutes or until a toothpick or fork comes out clean.
  • Remove the pan from the oven and let cool for a few minutes before cutting and serving.
